Egg Free Pancake

When my daughter was younger, she had an allergic reaction to egg. This recipe from Ovenhaven's website (http://ovenhaven.wordpress.com) was and still is a lifesaver. My daughter does not have an Egg Allergy anymore, however I still make pancakes using this recipe since my family seems to love it.

What You'll Need

  • 1 cup plain flour
  • 1/4tsp salt
  • 2tsp baking powder
  • zest from 1 orange
  • 2tbsp 100% pure maple syrup
  • 1.5tbsp olive oil
  • 1/2tsp vanilla essence
  • 3/4 - 1cup milk
  • chia seeds, as much as you like
  • chopped up fruits, to serve
  • 100% pure maple syrup, to serve (optional)
  • butter, to cook the pancake (optional)

How to Make It

Step 1

Mix all the dry ingredients. Make a hole in the centre. 

Step 2

Start pouring the wet ingredients, starting with the oil, maple syrup, vanilla essence, then lastly add 3/4 cup of the milk, and whisk. If it's too thick add a bit more milk.  

Step 3

Sprinkle in Chia seeds as much as you like, and stir.  

Step 4

On a griddle or frying pan greased with butter, pour pancake mix (the size is up to you) and cook.  

Step 5

Serve with fruits, and maple syrup (if using)
