Mini baked oatmeal cups

Saw this on @ovenhaven 's Instagram feed one morning and we've been making it quite often since then. It's so easy to make and delicious too!

What You'll Need

  • 1 cup rolled oats
  • 1 cup milk
  • 1 overripe banana, mashed
  • 1/2tsp baking powder
  • 1tsp vanilla essence
  • 1tsp rice malt syrup (optional)
  • chia seeds
  • For toppings/filling: anything you fancy, really
  • melted butter/coconut oil, for greasing

How to Make It

Step 1

Mix everything together (except the toppings) and set aside for about 5-10mins.  

Step 2

Meanwhile, grease your mini muffin cups. Or, ask your little helper to do it for you while you clean up the kitchen bench :) 

Step 3

Pour into generously greased mini muffin pans and fill/top with toppings of your choice. Here I put blueberries, pumpkin seeds, flaked almonds, chocolate chip and 100s and 1000s.  

Step 4

Bake at 180 degree celcius for about 15-20minutes.
