Banana and Chocolate Chip Mini Muffins

Banana Choc Muffin

Blackened bruised bananas only means one thing, time to make Banana & Chocolate Chip Mini Muffins!

This recipe is adapted from Nigella's Kitchen cookbook.

What You'll Need

  • 2 bananas, small to medium sized. Mashed.
  • 60 ml olive oil
  • 1 egg, lightly beaten
  • 110 gr plain flour
  • 1/2 tbsp raw cacao powder/cocoa powder
  • 1/2 tsp bicarbonate soda
  • 50 gr brown sugar
  • dark chocolate chips, as much as you want

How to Make It

Step 1

Preheat your oven to 200°C. Prepare mini muffins tray, line with baking parchment or grease with butter or oil. 

Step 2

In one bowl, combine all the dry ingredients except the sugar. Plain flour, cocoa powder and bicarb-soda. 

Step 3

In another bowl, combine all the wet ingredients such as the mashed bananas, oil and egg. 

Step 4

Add sugar to the wet ingredients mix. Mix well. 

Step 5

Add the dry ingredients into the wet ingredients mix. Fold gently with wooden spoon until all mixed together. Then add the chocolate chips. 

Step 6

Add mix into the mini muffins tray. Bake in the preheated oven for 12-15 minutes, or until a skewer inserted comes out clean.
