Macaroni and Zucchini Slice

My daughter loves it when I put this pasta and zucchini slice on her lunchbox. It can be made in advance (saves so much time!), easy to make, tasty, filling and healthy too with all the grated veggies we could sneak inside it. Delish!

What You'll Need

  • 3/4 cup Macaroni Pasta
  • 1 Zucchini, grated
  • 1 Carrot, grated
  • 3/4 grated Cheddar Cheese, plus extra for sprinkling on top
  • 1/2 cup Ricotta Cheese
  • 1/8 cup Olive Oil
  • 2 eggs, lightly beaten
  • 1/2 cup wholemeal Self Raising Flour
  • Salt and Pepper, to taste

How to Make It

Step 1

Preheat oven to 180C. Cook pasta on a boiling salted water for 8-10 minutes. Drain and set aside in a big bowl. Let it cool down. 

Step 2

On the big bowl of pasta, add in the rest of the ingredients then mix it altogether. Taste, and add more salt and pepper if needed. 

Step 3

Pour the mixture into a baking dish that has been greased. Sprinkle extra cheddar cheese on top. Bake in the oven for 30-40 minutes until cooked and golden on the top.  

Step 4

Let it cool down and cut into little squares (big enough for little fingers to hold). Taste great warm or at room temperature.
