Nutella Granola

OK alright. So Nutella has been having a bad rap recently due to the articles going around the net. But I always keep this recipe close to me, just in case I am in desperate need of sugar cravings (which actually doesn't happen often since I quit sugar a couple months ago). But you know - just in case.

This recipe is adapted from Sally's Baking Addiction.

What You'll Need

  • 2 cups of rolled oats
  • 1/2 cups of sliced almonds
  • 1/2 tsp of freshly grated cinnamon
  • 1/4 cup mashed banana (a small one)
  • 35 gr Nutella
  • 1/8 cup 100% pure maple syrup
  • 1/2 tsp vanilla extract
  • sprinkle of salt
  • 1/2 cup banana chips
  • 1/4 cup chopped 85% dark chocolate

How to Make It

Step 1

Preheat oven to 180C degrees. Line baking sheet with parchment paper or silicone baking mat. Set aside. 

Step 2

In a large bowl, mix together oats almonds, and cinnamon. Set aside. 

Step 3

In a small saucepan over medium-low heat, melt the mashed Banana, Nutella, maple syrup, vanilla extract, and salt together. Allow to bubble for about 1 minute. Remove from heat and pour over the dry ingredients. Stir it all together until all of the oats are moistened. 

Step 4

Spread the oats on the baking sheet in a thin even layer. Bake for 15 minutes, remove from the oven and stir. Bake for another 15-20 minutes until lightly browned. Top the granola with chocolate and banana chips. Gently stir. The chocolate will melt, creating larger chunks of granola. Allow granola to cool completely; it will harden and crunch up as it is exposed to air. Store in an airtight container for up to 3 weeks.
